4116 Gyuto Japanese Chef Knife Blank - KC06
A gyuto earns its place as the all-rounder of a Japanese kitchen set. The profile carries enough belly for rocking work while keeping the flat section long enough for clean push cuts through vegetables. The blade measures 230 mm, 310 mm overall.
1.4116 (X50CrMoV15) is the steel behind most German kitchen knives, and for good reason. It is tough, highly corrosion resistant and remarkably easy to sharpen — ideal for a first build or a knife that will see hard daily use.
Our process is deliberately simple: certified Voestalpine steel, hand grinding in our workshop, then professional heat treatment back at Voestalpine. That is why the hardness figures below are reliable.
