4116 Nakiri Japanese Chef Knife Blank - KC02
The nakiri is built for vegetables and nothing else. Its straight edge meets the board along its full length, so cuts finish cleanly without the sawing motion a curved blade demands. The blade measures 180 mm, 270 mm overall.
X50CrMoV15 is the pragmatic choice. Molybdenum and vanadium give it wear resistance without brittleness, and the chromium content makes it genuinely low-maintenance in a working kitchen.
