4116 Santoku Japanese Chef Knife Blank - KC09
Santoku translates roughly as three virtues, and the profile lives up to it: meat, fish and vegetables. The shorter, flatter edge suits up-and-down chopping and gives excellent control on a crowded board. The blade measures 175 mm, 255 mm overall.
X50CrMoV15 is the pragmatic choice. Molybdenum and vanadium give it wear resistance without brittleness, and the chromium content makes it genuinely low-maintenance in a working kitchen.
Every blank starts as certified Voestalpine stock. We profile and hand grind it in our own workshop, then send it back to Voestalpine for professional heat treatment — the same furnaces the steel came from.
