4116 Skinning Kitchen Knife Blank - Limited Edition

This is the older, longer skinning profile: 145 mm (5.7 in) of blade against the 135 mm (5.3 in) we now grind as standard. The extra ten millimetres change the feel more than the number suggests — a longer sweep through the cut and a little more reach when working around a joint.

Limited edition. We are not making these again. What is in stock is the last of the run, and once it is gone the 135 mm (5.3 in) version is the only skinner we carry. If you have built on this profile before and want a matching pair, this is the moment.

1.4116 is the sensible kitchen stainless: it laughs at moisture and acidic food, sharpens back on any stone, and stays predictable under heat treatment.
