Choosing Steel for a Kitchen Knife

A kitchen knife lives a different life from a camp knife. It gets used every day, cuts acidic food, spends time wet, and gets sharpened by someone who may or may not own a diamond stone. It never chops through a branch, and it rarely gets abused.

That changes what matters. For kitchen work, corrosion resistance and how thin an edge the steel will hold count for more than raw toughness. Here is how the steels we stock behave in that job.

Why buy your blanks from us

We buy Böhler and Uddeholm steel directly from Voestalpine, laser cut and hand grind every blade in our own workshop, and then send the ground blades back to Voestalpine for heat treatment — hardened by the mill that made the steel, in industrial vacuum furnaces, to the exact cycle the alloy was designed for. That is why the hardness figures below are ours and not a datasheet average, and why our blanks come out the same batch after batch. Every blade ships sharpened and honed, with free laser engraving on request.

1.4116 — the practical starting point

German stainless, the same family that Wüsthof and Zwilling build their production knives from. We run it at 54–57 HRC.

Good for kitchen work: genuinely stainless, very forgiving in use, and easy to sharpen — a novice can bring it back on a basic stone in minutes. It is also the most affordable steel we carry, which matters if you are making your first knives or building something a customer will not baby.

The trade-off: edge retention is modest — it dulls noticeably faster than N690 or AEB-L. But that trade cuts both ways, and it is worth being precise about it: 1.4116 is far easier to sharpen than either of them. A few passes on a basic stone and it is back. With N690 you work harder; with a powder steel you need diamond abrasives and patience.

So the real question is not "which holds an edge longest" but "who is sharpening this knife, and with what." A cook who touches up their knife every week is better served by a steel that comes back in thirty seconds than by one that takes twenty minutes twice a year.

Choose it if: you are learning, you are building for someone who will not maintain the knife carefully, or you want a knife that is easy to keep sharp rather than one that stays sharp longest.

N690 — the all-rounder

Böhler's cobalt-alloyed stainless. We run our kitchen profiles at 58–59 HRC. Comparable in composition and behaviour to VG-10.

Good for kitchen work: this is the balance point. Corrosion resistance is excellent, edge retention is a clear step up from 1.4116, and it still sharpens without a fight. It takes a fine edge and holds it through real cooking.

The trade-off: it will not match the powder steels on pure wear resistance. It does not need to for most kitchens.

Choose it if: you want one steel that does everything well and disappoints nobody. If a customer asks what to pick and gives you no other information, this is usually the right answer.

AEB-L — the one that takes the finest edge

A low-carbide stainless originally developed for razor blades. We run it at 60 HRC.

Good for kitchen work: because its carbides are extremely fine, AEB-L takes a keener edge than almost anything else on this list and sharpens beautifully. It is also tough for a stainless, so it tolerates thin geometry — which is exactly what a good kitchen knife wants. A thin AEB-L blade cuts better than a thick blade in a "better" steel.

The trade-off: edge retention is mid-pack. It gets very sharp and comes back easily, but it will not hold like a powder steel.

Choose it if: you are building a thin, high-performance kitchen knife — gyuto, santoku, petty — for someone who appreciates a keen edge and does not mind stropping.

Elmax — the premium powder steel

Uddeholm powder metallurgy stainless. We run it at 60–61 HRC.

Good for kitchen work: the powder process gives a fine, even carbide structure, so you get high wear resistance and good corrosion resistance without the coarse grain of older high-carbide steels. Edge retention is excellent.

Powder steels like Elmax only reach their potential with a cryogenic step in the heat treat cycle — without it, retained austenite is left in the structure and both hardness and stability suffer. This is one of the reasons our blanks go back to Voestalpine for hardening rather than being treated in a workshop oven.

The trade-off: sharpening takes diamond or ceramic abrasives and patience. It is also considerably more expensive than N690 or 1.4116.

Choose it if: you are building a premium knife for someone who wants long intervals between sharpenings and owns the stones to maintain it.

Vanax — the corrosion king

Uddeholm's nitrogen-alloyed powder steel, run at 60 HRC. Instead of carbon carbides it forms nitrides, which changes its behaviour meaningfully. Like every powder steel, it needs a cryogenic step in the hardening cycle to reach its full hardness and stability.

Good for kitchen work: corrosion resistance beyond any conventional stainless on this list. If a knife will live around salt, citrus, brine or a dishwasher-happy household, Vanax simply does not care. Wear resistance is high too.

The trade-off: it is the most expensive steel we carry and the most demanding to sharpen. Overkill for a dry home kitchen.

Choose it if: the knife will face genuinely harsh conditions — fish and seafood work, coastal humidity, commercial kitchens where knives get abused — or you are building a showcase piece where cost is secondary.

Sleipner — for cooks who want a working edge

Uddeholm tool steel, semi-stainless. We run our kitchen profiles at 60–61 HRC.

Good for kitchen work: high wear resistance and genuine toughness at working hardness. It holds a working edge through heavy prep and takes impact without chipping — which is why we use it for cleavers and bone choppers as well as chef blades.

The trade-off: it is semi-stainless, not stainless. Left wet against acidic food it will develop a patina and can spot. Many cooks like the patina and let it form deliberately, the way they would with a carbon steel knife — but the owner does have to wipe and dry the blade rather than leaving it in the sink.

Choose it if: you are building for someone who cooks seriously and looks after their knives, or you are making a heavy blade — cleaver, chopper, bone knife — where toughness matters most. If the knife is going to a household that leaves knives wet in the sink, steer them to N690 or AEB-L instead.

A note on finish: we offer Sleipner kitchen profiles with a stonewashed finish as well as our standard hand-ground finish. Stonewash hides the patina and the small marks that come with use, which makes it a practical choice for a blade that will be worked hard rather than displayed.

A note worth making: heat treatment and geometry matter more than the name on the steel. A well-hardened, thinly ground 1.4116 outcuts a badly heat treated Elmax every day of the week.
