Santoku translates roughly as three virtues, and the profile lives up to it: meat, fish and vegetables. The shorter, flatter edge suits up-and-down chopping and gives excellent control on a crowded board.

Our process is deliberately simple: certified Voestalpine steel, hand grinding in our workshop, then professional heat treatment back at Voestalpine. That is why the hardness figures below are reliable.

A hidden tang suits a wa-style handle. Burn or drill the ferrule, fit an octagonal or D-shape grip, and the balance stays forward where a Japanese blade wants it.
