A double edge blade is ground on both sides — a dagger profile, symmetrical, with two working edges meeting at the point. It is a distinctive build and an uncommon one, which is half the appeal.

N690 is the sensible choice for a double edge: fully stainless, tough enough for a blade this long, and it comes back to sharp on a stone without a fight.
