Böhler N690 is the workhorse stainless of the knife world. Cobalt and vanadium give it fine grain and genuine edge retention, while 17% chromium keeps corrosion at bay in a wet kitchen.
We buy our steel direct from Voestalpine, grind each blade by hand on the belt grinder, and return the finished blanks to Voestalpine for professional heat treatment. No guesswork, no garage quenching.
