N690 Gyuto Japanese Chef Knife Blank - NC02
The gyuto is the Japanese take on the Western chef knife, and it is the blade most makers reach for first. Its gently curved belly allows both rocking and push cuts, so a single knife handles onions, herbs and proteins without complaint.
This is Böhler's cobalt-alloyed stainless, and it has earned its reputation in kitchen work. Fine carbide structure means a clean, sharp edge; the chromium content means you can leave it wet without regret.
