N690 Kiritsuke Japanese Chef Knife Blank - NC03
The kiritsuke is the statement piece of a Japanese knife roll. Its angled reverse-tanto tip gives surgical precision for detail work, while the long flat edge slices cleanly in one pull. A hidden tang knife blank, made for a wa handle or a block handle.
N690 hits the balance most makers want: it takes a keen edge, holds it through a service, and sharpens back without a fight. The high chromium content makes it forgiving around acidic food and standing water.
Steel sourced directly from Voestalpine, hand ground by our team, and heat treated professionally by Voestalpine before it ships. Every blank arrives at working hardness, ready to finish.
