N690 Petty Nakiri Japanese Chef Knife Blank
A petty nakiri keeps the straight vegetable edge in a compact package. Ideal for shallots, garlic and herb work where a full nakiri feels unwieldy.
This is Böhler's cobalt-alloyed stainless, and it has earned its reputation in kitchen work. Fine carbide structure means a clean, sharp edge; the chromium content means you can leave it wet without regret.
Our process is deliberately simple: certified Voestalpine steel, hand grinding in our workshop, then professional heat treatment back at Voestalpine. That is why the hardness figures below are reliable.
