N690 Santoku Japanese Chef Knife Blank - NC01
The santoku is the workhorse of the Japanese home kitchen. A flatter edge and shallow tip make it forgiving to learn on, and the compact length keeps it nimble in tight spaces. A hidden tang knife blank, made for a wa handle or a block handle.
This is Böhler's cobalt-alloyed stainless, and it has earned its reputation in kitchen work. Fine carbide structure means a clean, sharp edge; the chromium content means you can leave it wet without regret.
Every blank starts as certified Voestalpine stock. We profile and hand grind it in our own workshop, then send it back to Voestalpine for professional heat treatment. The same furnaces the steel came from.
