N690 Single Bevel Tanto Yanagiba Chef Knife Blank
Built for slicing rather than chopping, the yanagiba uses its length to finish a cut in a single stroke. The single-bevel grind releases the slice cleanly instead of tearing it.
This is Böhler's cobalt-alloyed stainless, and it has earned its reputation in kitchen work. Fine carbide structure means a clean, sharp edge; the chromium content means you can leave it wet without regret.
Every blank starts as certified Voestalpine stock. We profile and hand grind it in our own workshop, then send it back to Voestalpine for professional heat treatment — the same furnaces the steel came from.

The tang is drilled and profiled for scales, so handle fitting is straightforward. Contour them to your grip and the knife is done.
