N690 Yanagiba Japanese Chef Knife Blank (Right Hand)

Built for slicing rather than chopping, the yanagiba uses its length to finish a cut in a single stroke. The single-bevel grind releases the slice cleanly instead of tearing it.

N690 hits the balance most makers want: it takes a keen edge, holds it through a service, and sharpens back without a fight. The high chromium content makes it forgiving around acidic food and standing water.

Our process is deliberately simple: certified Voestalpine steel, hand grinding in our workshop, then professional heat treatment back at Voestalpine. That is why the hardness figures below are reliable.
