Traditionally reserved for head chefs, the kiritsuke pairs a dramatic angled tip with a long straight edge. It rewards a confident push-cut technique and looks the part on any board. A hidden tang knife blank, made for a wa handle or a block handle.
Uddeholm Sleipner is a cold-work tool steel that punches above its class. High chromium content gives it better corrosion resistance than most carbon steels, and it hardens to 60-62 HRC with excellent edge stability.
Every blank starts as certified Voestalpine stock. We profile and hand grind it in our own workshop, then send it back to Voestalpine for professional heat treatment — the same furnaces the steel came from.
