The last step, and the one people rush
You have shaped the handle, sanded through the grits, and the knife looks finished. There is one more decision, and on a kitchen knife it matters: what goes on the handle, and how you treat the edge from here.
Get it wrong and the handle absorbs water, the wood goes grey, and the finish you applied ends up in the food.
What "food safe" actually means
Almost every cured finish is inert once fully hardened. The concern is not really toxicity — it is whether the finish stays put, and whether it seals the wood well enough to stop water getting in.
A handle that absorbs water swells, shrinks, cracks and eventually harbours bacteria in the gaps that open around the tang. That is the real failure mode, and a good finish prevents it.
Materials that need nothing
Micarta and G10 are already resin. Sand to the finish you want and stop. No oil, no wax, no sealing. Water does nothing to them.
Stabilised wood is resin-impregnated throughout. It needs no sealing either. A light coat of wax adds sheen if you want it, and nothing else.
If you built with any of these three, you are done. The rest of this guide is for natural wood.
Finishing natural wood
Three options that work, in order of durability.
Hardening oil
Pure tung oil, or a polymerising oil sold for cutting boards and wooden kitchen tools. These cure by oxidation into a solid film inside the wood, rather than sitting on the surface.
How to apply: thin coats, wiped on and then wiped off after ten minutes. Let each coat cure fully — with pure tung oil that means 24 hours or more. Three thin coats beat one thick one, every time. A thick coat stays tacky for weeks.
Result: the most durable option. Water beads. The wood keeps its natural feel rather than looking coated.
Note: "tung oil finish" on a label is often not tung oil — it is a varnish blend. For a kitchen knife, buy pure tung oil.
Mineral oil and beeswax
Food grade mineral oil, sometimes blended with beeswax into a paste. The standard treatment for cutting boards.
How to apply: rub in generously, let it soak for a few hours, wipe off the excess. No cure time.
Result: immediate, easy, completely food safe, and temporary. Mineral oil does not cure — it washes out over months and needs reapplying two or three times a year.
Choose it if: you want the knife finished today and do not mind maintenance.
Hard wax oil
Blends of oil and wax sold for wooden worktops. Cures harder than oil alone, faster than tung oil.
Result: a good middle ground. Check the datasheet says it is safe for food contact surfaces once cured.
What to avoid
Polyurethane and varnish. They form a film on the surface rather than penetrating. On a knife handle that film chips at the edges, water gets underneath, and you end up stripping it off.
Boiled linseed oil. Contains metallic driers. Fine for furniture, not for something you hold while preparing food.
Anything untested. If you cannot find out what is in it, do not put it on a kitchen knife.
The step to do before glue-up
Worth repeating because it is the most common regret: finish the front edge of each scale before you bond it to the tang. Once the handle is assembled, the edge that meets the blade is nearly impossible to sand or oil cleanly.
Sand that edge to your final grit while the scale is loose and flat, apply your oil, let it cure, and only then glue up.
Caring for the edge
Your blank arrived sharpened at 400 grit. After the build, a few passes on a fine stone or a leather strop restores it — you are maintaining an edge, not creating one.
In use:
- Wood or plastic boards only. Glass, stone and ceramic boards destroy edges. This does more damage than anything else on this list.
- Hand wash, dry immediately. No dishwasher — the heat and detergent attack both the handle and the edge, and blades knock against other items.
- Strop regularly. Ten passes on leather before use keeps a knife sharp far longer than sharpening it once it has gone dull.
- Store it protected. A block, a magnetic strip or a sheath. A drawer full of loose cutlery chips edges.
Stainless is not stain-proof
Our kitchen steels — 1.4116, N690, AEB-L, Elmax, Vanax, M390 — all have good to excellent corrosion resistance. That means they resist rust, not that they are immune.
Acidic food left on a blade will mark it. Salt water left to dry will pit it. Sleipner and Vanadis 4 Extra are tool steels rather than true stainless and need more attention than the rest.
The rule is the same for all of them: rinse, dry, put it away.
Sharpening the harder steels
Hardness changes what abrasive you need:
- 1.4116 at 54–57 HRC — any stone works.
- N690 and AEB-L at 58–60 — ordinary waterstones are fine.
- Elmax, M390, Vanax at 60–61 — diamond or ceramic. Standard stones struggle against the carbides.
- Vanadis 4 Extra at 63–64 — diamond, and patience.
The trade is straightforward: harder steel needs sharpening less often, and needs better equipment when it does.
