Vanax Gyuto Japanese Chef Knife Blank - VXC02
The gyuto is the Japanese take on the Western chef knife, and it is the blade most makers reach for first. Its gently curved belly allows both rocking and push cuts, so a single knife handles onions, herbs and proteins without complaint.
Uddeholm Vanax is nitrogen-alloyed super stainless and effectively immune to rust. It combines the corrosion resistance of austenitic stainless with 60 HRC hardness and cold-work tool steel wear resistance.
Our process is deliberately simple: certified Voestalpine steel, hand grinding in our workshop, then professional heat treatment back at Voestalpine. That is why the hardness figures below are reliable.
